The sweetener I use by default, always. With fructose and sorbitol intolerance, and limited options, this sweetener has saved me on more than one occasion. It has a rich caramel flavor, it provides moisture to the cakes and the best thing is that it caramelizes (unlike glucose or dextrose which costs much more, with this one, it is a matter of leaving it in the pan to dehydrate a little and it is an incredible caramel for flan. It also caramelizes great painted on puff pastry. I like it more than others because I notice it has more flavor, more toasted than others. Oh, and I also use it as a substitute for honey, since it has a similar texture. They do not have the same properties, it is a good honey trompe l'oeil.
El endulzante que uso por defecto, siempre. Con intolerancia a la fructosa y sorbitol, y con opciones limitadas, este endulzante me ha salvado en mas de una ocasión. Tiene un sabor rico acaramelado, aporta humedad a los bizcochos y lo mejor es que se carameliza (a diferencia de la glucosa o la dextrosa que cuesta mucho mas, con este, es cuestion de dejarlo en la sarten a que se deshidrate un poco y queda un caramelo para flan increible. También carameliza genial pintado encima de hojaldre. Me gusta mas que otros porque le noto mas sabor, mas tostado que otros. Ah! Y también lo uso como sustituto de la miel, al tener una textura similar pese a que no tienen las mismas propiedades, es un buen trampantojo de miel.
